Scientists Reveal Ideal Salt Amount for Perfect Pasta Cooking

Cooking pasta may seem simple, but new research highlights the crucial role salt plays in achieving the perfect texture and taste. According to a study published in the scientific journal Food Hydrocolloids, the recommended amount of salt is not just a pinch but rather 7 grams per liter of water, which equals approximately 1.25 teaspoons. This adjustment significantly impacts the cooking process and the final dish.

Dr. Andrea Skoti, a senior lecturer in physical chemistry at the University of Lund, explains that salt does more than enhance flavor; it affects the microstructure of the pasta. Proper salinity helps maintain the structure of spaghetti during cooking, preventing it from becoming mushy. “Cooking pasta with the right amount of salt is not just a matter of taste,” Skoti stated. “It influences the microstructure of the pasta, thus enhancing the overall dining experience.”

The research team employed advanced techniques, including particle accelerators and neutron devices, to observe how pasta transforms internally while cooking. They discovered that the ideal texture is reached after approximately 10 minutes of boiling. The study indicates that gluten in traditional spaghetti acts as a protective network that preserves starch integrity.

Notably, the study found that the greatest structural damage occurs when gluten-free spaghetti is cooked for 13 minutes in highly salted water, while regular pasta demonstrated greater resilience and flexibility. The scientists aim to leverage these findings to develop improved and more durable gluten-free pasta varieties.

In addition to salt, the study presented another tip for pasta enthusiasts: allowing cooked pasta to cool before consuming it can enhance its health benefits. Nutritionist Kevin David Rejl explains that when pasta or rice cools, the starch molecules reshape into what is known as resistant starch. This type of starch behaves like fiber, digesting more slowly, providing a steady release of energy, and helping to maintain stable blood sugar levels.

This technique is not only beneficial for casual diners but is also utilized by professional athletes, including football players, to sustain energy levels, improve recovery, and facilitate weight management.
