A delicious and nutritious meal option has emerged for families, especially those observing a fast. The recipe for stuffed peppers, which can easily serve as a hearty Sunday lunch, combines simple ingredients to create a dish everyone can enjoy.
Ingredients Needed for the Dish
To prepare these stuffed peppers, gather the following ingredients:
– 8 small peppers (such as bell peppers)
– 200 grams of rice
– 1 onion
– 1 carrot
– 1 zucchini (or a small piece of pumpkin)
– 2 cloves of garlic
– 3 tablespoons of olive oil
– 1 teaspoon of dried herbs (such as oregano, basil, or thyme)
– Salt and pepper to taste
– A small bunch of fresh parsley (finely chopped)
For the sauce, you will need:
– 500 ml of tomato juice or pureed tomatoes
– 1 teaspoon of sugar
– 1 teaspoon of flour (optional, for thickening)
– A little olive oil
– Salt to taste
Preparation Steps
Begin by heating the olive oil in a pan and sautéing the finely chopped onion and garlic until they are translucent. Next, add the grated carrot and zucchini, cooking until they soften. Incorporate the rice along with the dried herbs, mixing well. Add a small amount of water to help the mixture blend, allowing the rice to swell slightly but not fully cook.
Once the filling is ready, cut the tops off the peppers and remove the seeds. Stuff each pepper with the prepared mixture, arranging them upright in a pot or a deep baking dish.
In a separate saucepan, heat the tomato juice with a splash of olive oil, sugar, and salt. If you prefer a thicker sauce, you may add the flour. Pour this sauce over the stuffed peppers.
Cover the pot and simmer for 30 to 40 minutes on low heat. Alternatively, you can bake the stuffed peppers in an oven preheated to 200 degrees Celsius for about 45 minutes, or until the peppers are tender and the sauce has thickened.
This dish pairs beautifully with a fresh cabbage and carrot salad, boiled potatoes, or whole-grain bread. Enjoy this wholesome meal with your family, making it a delightful addition to your weekend dining.
