In her article, food writer Grace Elkus emphasizes that the addition of gherkin brine can elevate even the simplest potato salad. She notes, “This rule holds particularly true for potato salad, whose mild-mannered ingredients will happily soak up as much pickle flavour as you’ll give them.” This technique not only enhances the dish but also addresses the common issue of bland vegetables often found in traditional recipes.
Infusing Flavor from the Start
The renowned cook and author Julia Turshen, in her cookbook Small Victories, suggests an unconventional method for incorporating gherkin brine into potato salads. Instead of merely mixing it into the dressing, Turshen advocates for boiling the potatoes in a mixture of three parts water and one part pickle brine. She states, “The limit does not exist,” highlighting the potential for flavor infusion.
Elkus praises this approach, explaining that potatoes are dense and bland on their own. “Seasoning them on their surface will only get you so far,” she writes. By boiling the potatoes in gherkin brine, the starches become more absorbent, allowing for a deeper flavor penetration. This technique ensures that when the potatoes are drained and ready to be mixed, they come with an enhanced taste.
To achieve the best results, Elkus recommends placing the potatoes in a saucepan and covering them mostly with cold water. Then, enough gherkin brine should be added to completely submerge the potatoes, followed by salt. The mixture is brought to a boil, allowing the flavors to meld beautifully.

The versatility of using gherkin brine extends beyond potato salad. Elkus encourages home cooks to apply this flavor infusion technique in various potato dishes year-round. “When potato salad season comes to a close, don’t let this trick fade along with it,” she advises. Whether smashing potatoes for an appetizer or mashing them for croquettes, the gherkin brine method remains an effective way to elevate flavors.
