A delicious recipe for stuffed peppers has emerged, appealing to families seeking a satisfying meal for Sunday lunch. This dish combines a variety of fresh ingredients and spices to create a flavorsome vegetarian option. The recipe is straightforward, ensuring that even novice cooks can impress their loved ones.
Ingredients for Stuffed Peppers
To prepare this dish, you will need the following ingredients:
– **8 small peppers** (bell peppers or your choice)
– **200 grams** of rice
– **1 head** of onion
– **1 carrot**
– **1 zucchini** (or a small piece of pumpkin)
– **2 cloves** of garlic
– **3 tablespoons** of olive oil
– **1 teaspoon** of dried herbs (such as oregano, basil, or thyme)
– Salt and pepper to taste
– A bunch of fresh parsley (finely chopped)
For the sauce:
– **500 ml** of tomato juice or pureed tomatoes
– **1 teaspoon** of sugar
– **1 teaspoon** of flour (optional, for thickening)
– A splash of olive oil
– Salt to taste
Preparation Steps
Begin by heating the olive oil in a pan over medium heat. Sauté the finely chopped onion and garlic until they become translucent. Add the grated carrot and zucchini, cooking until they soften. Next, incorporate the rice along with the dried herbs, mixing well. Pour in a small amount of water to help the rice absorb flavor without cooking it fully.
Remove the tops of the peppers and clean out the seeds. Fill each pepper with the prepared rice mixture, packing it gently but firmly. Arrange the stuffed peppers upright in a pot or a deep baking dish.
In a separate pot, heat the tomato juice with a little olive oil, sugar, and herbs. If you prefer a thicker sauce, stir in the flour. Pour this sauce over the stuffed peppers, ensuring they are well-covered.
Cook the peppers covered for **30 to 40 minutes** on low heat, or bake them in the oven at **200 degrees Celsius** for about **45 minutes**. The goal is for the peppers to soften and the sauce to thicken.
Serve the stuffed peppers alongside a fresh salad of cabbage and carrot, boiled potatoes, or whole-grain bread for a complete meal. Enjoy this wholesome dish with family and friends, and savor the delightful flavors it brings to your table.
