Jamie Oliver has shared his valuable advice for preparing a “right royal feast” this Christmas, emphasizing the art of crafting the perfect roast turkey. In a detailed YouTube tutorial, the acclaimed chef revealed the key components required for an exceptional holiday dinner, which traditionally features a roast turkey accompanied by crispy roast potatoes, stuffing, and an array of roasted vegetables.
In the video, Jamie, aged 50, began by stating, “If I could give you anything this Christmas, it will be the foundations of the perfect roast Christmas dinner.” He identified three essential elements for success: the turkey, roast potatoes, and gravy, highlighting the importance of preparation in achieving a delicious meal.
Preparation Steps for the Ideal Turkey
To ensure the turkey turns out perfectly, Jamie emphasized a crucial first step: preparing the base for the gravy, known as the trivet. He explained that this initial preparation is vital for locking in flavors. “Chop two sticks of celery, two onions, and two carrots. This is going to be the base,” he advised. “Caramelize; give real depth of flavour. So, cut them big, cut them proud, and cut them chunky.”
Jamie proceeded to demonstrate his technique, placing the chopped vegetables into a roasting tray along with half a garlic bulb, skins left on. He then addressed the turkey’s giblets, dicing them and incorporating them into the mixture for added flavor depth. “This is where the depth of flavour comes from,” he noted.
Once the roasting tray was prepared, Jamie focused on the turkey itself. He recommended stuffing the cavity with chopped clementines and a chili to enhance the dish’s taste while ensuring that air could circulate during roasting. He also added fresh herbs—sage, rosemary, and bay—along with homemade stuffing to further enrich the flavor profile.
Creating a Juicy Turkey
To achieve a juicy turkey, Jamie revealed a unique technique. He suggested taking a whole pack of butter at room temperature, squeezing it to soften, and massaging it across the entire bird. “All that fat will melt off, leaving the flavours to permeate the bird,” he reassured viewers. A generous seasoning of salt and pepper followed, along with grated nutmeg and pressed herbs.
After preparing the turkey, Jamie recommended covering it securely with foil while leaving the cavity exposed. He then placed the turkey on the trivet, resting atop the chopped vegetables and giblets, before transferring it to the oven. Cooking times will vary based on the turkey’s size and weight, ensuring that each family can adapt the recipe to their needs.
