Hairy Bikers Revamp Classic Gratin with Seasonal Courgette
The renowned culinary duo known as the Hairy Bikers has introduced a fresh take on the traditional gratin by replacing potatoes with the seasonal vegetable, courgette. This change not only enhances the dish’s flavour but also offers a lighter alternative for those seeking a nutritious option during the courgette season, which typically spans from late spring to early autumn in the UK, peaking between June and September.
Gratin, a classic French cooking technique, usually involves layering vegetables or meats with cheese and breadcrumbs. The Hairy Bikers have embraced this method, highlighting the courgette’s creamy texture and vibrant taste. Their take on this dish has been described as “creamy and flavoursome without being too rich,” making it an appealing choice for a satisfying supper.
Ingredients for the Courgette Gratin
To create this delightful dish, the following ingredients are required:
– 2 tbsp olive oil
– 800g courgettes, sliced into 5mm rounds
– A few sprigs of thyme
– A few basil leaves
– 100ml crème fraîche
– 50ml milk
– 1 tsp plain flour
– 75g Gruyère or similar cheese, grated
– Salt and freshly ground black pepper
The combination of these ingredients ensures a rich yet balanced flavour profile.
Preparation Method
The success of the gratin lies in achieving a crispy, golden topping, which requires a hot oven. Begin by preheating the oven to 200°C (fan 180°C/Gas 6).
In a large, lidded frying pan, drizzle the olive oil and add the sliced courgettes along with the thyme and basil. Season generously with salt and pepper. Cover and cook gently for approximately ten minutes, stirring occasionally. The courgettes should become slightly tender while maintaining their al dente texture. The olive oil will take on a rich green hue from the courgettes.
Once cooked, transfer the courgette mixture to an ovenproof dish. In a separate bowl, whisk together the crème fraîche, milk, and flour, seasoning it with salt. Pour this creamy mixture over the courgettes, ensuring it’s okay if it does not completely cover them, as it will bubble up during baking.
Finally, sprinkle the grated cheese over the top and place the dish in the oven. Bake for roughly 25 minutes, or until the gratin is golden and bubbling, creating a dish that is not only appealing to the eye but also to the palate.
This gratin showcases how seasonal ingredients can transform a classic recipe, offering a deliciously different option for home cooks looking to elevate their vegetable dishes. The Hairy Bikers’ innovative approach not only respects traditional French cooking but also encourages a fresh appreciation for seasonal produce.
