Legendary Chef’s Three-Ingredient Pasta Sauce Takes the Spotlight
A simple yet extraordinary pasta sauce recipe has gained recognition as the “world’s best,” according to the culinary platform Delish. This three-ingredient sauce, celebrated for its rich flavor and ease of preparation, has become a must-try for home cooks eager to elevate their meals without complex techniques.
The recipe, which features prominently in Marcella Hazan’s 1992 book, Essentials of Classic Italian Cooking, utilizes only tinned tomatoes, a peeled onion, and a generous chunk of butter. Hazan, a renowned Italian-American chef, emphasized the simplicity and effectiveness of this sauce, stating, “No other preparation is more successful in delivering the prodigious satisfactions of Italian cooking than a competently executed sauce with tomatoes.”
To prepare the sauce, one simply places half of a peeled onion into a saucepan along with the butter and tinned tomatoes. The mixture is then allowed to simmer gently for 45 minutes. This method stands out for its lack of dicing, frying, or additional seasonings, making it accessible for novice cooks and busy individuals alike.
Marcella’s husband, Victor Hazan, shared insights into her culinary philosophy during an interview with Epicurious. He stated, “Marcella was a genius when it came to taste. She had an immediate understanding of how flavor affects a dish.” This intuitive approach to cooking underpins the brilliance of the sauce, allowing the ingredients to meld together naturally.
