Roast potatoes are often parboiled to achieve a soft and fluffy interior before being crisped in the oven. While this method is common, many may overlook an essential step that significantly enhances the crispiness. According to renowned recipe developer Angela Nilson, who shares her insights on BBC Good Food, letting the potatoes steam dry for at least 15 minutes post-boiling is vital for achieving the desired texture.
Why Steam Drying Matters
The steaming process allows some moisture to escape from the potatoes, which is crucial for creating that coveted crispy exterior. After boiling, resting the potatoes enables them to cool slightly, making them easier to handle while also promoting a better roast. This method not only enhances the final crispiness but also prevents the potatoes from becoming soggy.
Chef Esther Clark also advocates for this technique, emphasizing that it contributes to the overall quality of the roast. She suggests boiling the potatoes for approximately 8 to 10 minutes, then allowing them to steam dry. To add texture, she lightly shakes the potatoes to roughen their surfaces before tossing them in fat and seasonings of choice.

Once prepared, the potatoes should be placed on a tray and coated in fat, with goose fat being Clark’s preferred option. They are then roasted at a temperature of 200°C for about one hour. The optimal time is reached when the potatoes turn golden and crispy while remaining soft on the inside, presenting the ideal roast potato experience.
