Michelin-Starred Chef Angelo Sato Overcomes Cult Past to Shine
At Humble Chicken 3.0 in Soho, London, chef Angelo Sato prepares to serve his renowned omakase menu, a culinary experience featuring 16 meticulously curated courses. This Michelin-starred restaurant, which seats just 13 guests, offers a lavish meal priced at £235 per person. As Sato and his team of four sous-chefs calmly ready the dishes, they highlight ingredients such as hand-dived scallops and chawanmushi—an exquisite steamed custard—alongside unique offerings named “humble pigeon” and “picnic.”
At just 32 years old, Sato has set his sights on earning a third Michelin star, a distinction held by only ten restaurants in the UK. “That’s been the goal of my lifetime,” he states with a confident smile, reflecting his ambition and passion for culinary excellence.
From Cult Childhood to Culinary Success
Born to a Japanese father and a German mother, both of whom were missionaries, Sato’s early life was shaped by his upbringing in the Children of God, a controversial religious group founded by David Berg. While the organization has faced serious allegations related to child abuse, Sato maintains a sense of detachment from these claims, noting, “For me, my childhood was normal.” He adds, “Although I don’t really know what normal is.”
Despite his unconventional beginnings, Sato has emerged as one of the UK’s most exciting young chefs. His journey has not only been marked by culinary accomplishments but also by resilience and determination. He has transformed his past experiences into a source of strength, allowing him to create innovative and memorable dining experiences for his guests.
Sato’s approach to cooking emphasizes simplicity and quality. Each dish is carefully designed to highlight the natural flavors of the ingredients, providing diners with a unique and immersive experience. The restaurant’s intimate setting further enhances this connection, allowing patrons to engage closely with the culinary process.
Aiming for Culinary Recognition
Sato’s goal of achieving a third Michelin star is a testament to his dedication and skill. The Michelin Guide is known for its rigorous standards, and securing this accolade would place Humble Chicken 3.0 among the elite dining establishments in the UK. As the lunch service begins, the atmosphere in the restaurant buzzes with anticipation and excitement.
The challenges Sato has faced in his life have undoubtedly shaped his culinary perspective. His ability to navigate adversity and channel it into his cooking resonates with many, making him a compelling figure in the culinary world. As he continues to refine his craft, Sato aims to inspire others who may be facing their own struggles.
In a city known for its vibrant food scene, Sato’s story stands out. His journey from a religious cult to a Michelin-starred chef is not just a narrative of personal triumph but also a reflection of the transformative power of passion and dedication. With each dish served at Humble Chicken 3.0, Sato not only showcases his culinary talent but also shares a piece of his extraordinary life story with the world.
